Cut Out Chocolate Chip Cookies

As a cookie artist, I love having more than just a sugar cookie in my arsenal.   So when I came across a couple of cut out chocolate chip cookie recipes, I kept trying them all and mixing and matching until they made sense for me ya know?

So understanding that cut-out cookie recipes are seriously temperamental is key!  For example, the number one thing my students have complained about is that the cookies spread.  And nobody wants to take all that time to pick their favorite cookie cutter for it to spread into some giant blob after a while right?

Creating the right kind of cookie

Did you know room temperature butter was best for making cookies?  I always use unsalted butter because I hate salty cookies.  Most cookie recipes call for a tsp of salt and honestly when you do salted butter plus that tsp of salt it can be a LOT.  Unless you’re doing a salted caramel cookie?

Anyway, I love playing with ingredients in the kitchen.  While most people automatically default to vanilla for flavorings, the options are infinite when it comes to flavoring the dough.  I love using flavorings that are emulsions!  YES!  New vocabulary word for y’all.  You can find emulsions in your local craft stores and your local cake supply stores. 

The Recipe

1 cup unsalted butter (softened)

1 cup packed light brown sugar

1/2 cup of granulated sugar

2 whole eggs

2 teaspoons vanilla or caramel extract

1/2 teaspoon salt

1/4 teaspoon baking powder

4.5 cups flour

1 cup mini chocolate chips

The Procedure

Alright let’s talk about what to do with this and yes it’s important you pay attention to this part.  For starters preheat your oven to 350 degrees.  Cream the butter and sugar(s) in a stand mixer until creamy with no lumps.  

Add the eggs and vanilla and mix until just incorporated.  

Mix the salt, baking powder, and flour in a separate bowl and then add to the mixture.  

Mix until just incorporated and your dough is ready to roll!  Literally!  Roll dough out onto a lightly floured surface.  Cookies rolled out between 1/8 and 1/4 inch thickness work beautifully for this recipe.   Bake at 350 for 7-10 mins until cookies are lightly browned on the sides.

You can save and store this dough.  Wrap in plastic wrap then seal inside an airtight freezer bag.  Freeze for up to 90 days.
