Easy banana bread recipe

One of the things we had a bit of before the quarantine was bananas.  I knew my kids were not going to eat them.  I had a particular recipe in mind but the days became long and they began to turn brown.  I knew at that point I needed to make bread or muffins.

Do all banana bread loaves have nuts?

Not really.  I would have preferred my bread to have nuts but considering stores are closed, that just wasn’t in the cards for me.  Like I LOVE banana nut bread toasted from Starbucks.  OMG, in the winter with a Grande Blonde White Chocolate Mocha (hot) it literally is life-changing!

Does the color of the banana matter?

Actually yes it does!  Green bananas are not very sweet.  Yellow bananas are sweet but they are fully ripe when the brown spots begin to show up.  At this point, most people don’t want to eat them, but they are phenomenal to be baked at this point.

Banana Bread or Muffins
Yield: 12 muffins

Banana Bread or Muffins

Prep Time: 10 minutes
Cook Time: 55 minutes
Additional Time: 20 minutes
Total Time: 1 hour 25 minutes

This super delicious batter works well in a muffin pan, Bundt pan, square cake pan or bread pan

Ingredients

  • For the batter:
  • 1/2 cup unsalted butter melted and cooled slightly
  • 2/3 cup light brown sugar, lightly packed make sure it is fresh and soft
  • 2 large eggs
  • 2 cups mashed ripe bananas (about 3-4 bananas)
  • 2 teaspoons pure vanilla extract
  • 1 3/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup brown sugar
  • Crumble topping
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 4 tbsp unsalted butter melted
  • 1½ cups all-purpose flour

Instructions

Preheat oven to 350°F. 
Crumble topping:
To make the crumb topping, combine sugars, cinnamon and salt in a medium bowl. Whisk in melted butter then add flour. Stir using a fork mixture will be crumbly.
Batter:
In a large bowl, whisk melted butter and 2/3 cup brown sugar until well combined, about 1 minute. Add eggs, mashed banana and vanilla, whisking until combined. 
In a separate bowl, combine the flour, baking soda and salt. Add dry ingredients to the wet ingredients, using a rubber spatula, lightly stir the batter until no streaks of flour remain. Be careful not to over mix. 
Grease a 8*8 square baking pan and add the batter to the pan. Smooth into an even layer.
Sprinkle the top of the batter with 1/3 cup (or more) brown sugar.
Bake for 35-40 minutes, rotating once during the bake time. The bread is done when a toothpick inserted into the center comes out clean.
Place on a wire rack to cool.

Notes

Time adjustments will need to be made if you adjust the recipe. For example the muffins will bake a little less. 15-17 mins or so. The 8*8 pan baked for about 25-30 mins depending on your oven.
Bread pan will bake a little longer 50+ mins.
