Pear or Apple Streusel Coffee Cake

Imagine sitting outside your favorite coffee shop reading a juicy novel and your hostess brings over a complimentary streusel coffee cake.  You bite into it and the flavors begin to dance on your tongue.  I often imagine this is what my guests feel like when I invite them over for brunch.  I’m one of those people that loves to pair sweets with the savory aspects of brunch.

When I was in culinary school and even on externship I loved hearing stories about how recipes were passed down through the generations.  For me, it’s my grandmother’s pound cake recipe.  A friend of mine shared this Pear Streusel Coffee Cake recipe since I don’t like pears, I made it with apples.  When  I tell you this recipe is delicious either way!  But you don’t have to take my word for it, try it out for yourself.

This recipe is super easy and simple to pull together.  

Pre-Heat the oven to 400 degrees.  Butter an 8-inch square baking dish and set it aside.  Combine all the dry ingredients into one bowl.  Whisk the egg into a second bowl and add the other liquids.  Pour the wet into the dry ingredients and add the chopped fruit before stirring.  Mix entire batter until fully incorporated.  Pour into buttered baking dish.

To make the streusel:

Mix sugar, flour, cold butter and cinnamon in a bowl by pinching them together with your fingers until well combined.

Then sprinkle the streusel topping over the batter.  Bake the cake for 30-35 mins (until it is golden and dry on top).  Allow to cool in the pan and then cut into squares

Yield: 1 cake

Ingredients

  • Unsalted butter for the baking dish
  • 1 1/4 cups all-purpose flour
  • 2 1/4 tsp baking powder
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1 large egg
  • 1/2 cup whole milk
  • 4 tbsp unsalted butter, melted
  • 2 ripe pears or apples (unpeeled, cored and chopped= 1 1/2 cups)
  • For the streusel:
  • 1/2 cup sugar
  • 1/4 cup all-purpose flour
  • 3 tbsp cold unsalted butter (cut up)
  • 1 tsp ground cinnamon

Instructions

  1. Heat the oven to 400 degrees
  2. Butter an 8 inch square baking dish
  3. Combine all dry ingredients in a medium bowl.
  4. In a separate bowl beat the egg, add the milk and melted butter.
  5. Pour the wet ingredients into the bowl with the dry ingredients and add the chopped fruit.
  6. Mix well-until incorporated (careful not to over mix)
  7. Pour into buttered baking dish

To make the streusel:

  1. Mix sugar, flour, cold butter and cinnamon in a bowl by pinching them together with your fingers until well combined.

Combine:

  1. Sprinkle streusel topping over the batter
  2. Bake the cake for 30-35 mins (until it is golden and dry on top)
  3. Allow to cool in the pan and then cut into squares

Notes

Cake will keep up to 4 days covered in air tight container at room tempreture
