White Chocolate Oreo Cheesecake Bites

When it comes to cheesecakes I have to admit that I’m a sucker for a good cheesecake man. Also, my favorite non-home made cookies are Oreos. Put the two together and I’m in love! But while I love cheesecake, I don’t always love the time it takes to make them. So while I totally love my no-bake oreo cheesecake sometimes we just need a little one-bite snack every now and then.

This recipe really is simple. A couple of easy to find ingredients will be sure to please your whole family (or yourself). Listen, I won’t tell anybody. I really won’t. So let’s get into this recipe.

Our cream cheese needs to be at room temperature. You should be able to press your finger into. This should take no longer than 15-20 mins sitting out on the counter. So keep that in mind, we don’t want this sitting out all day.

We need a row of Oreos, like 10 of them would be great. Throw them in the food processor and turn them into Oreo dust!

Blend it smooth

Scoop it with a cookie scooper and freeze for a minimum of 2 hours.

Here’s where this gets fun. Once the balls are frozen you can smooth out any rough edges by rolling the balls in your hands really quickly. Move quickly so they dont melt.

Melt your candy coating, almond bark or white chocolate chips. If it’s too thick add a little vegetable oil to thin it out.

I let my cheesecake bites harden at room temperature. It took about 20 mins. Make sure you put your decoration on the top after dipping them. I used Oreo dust, but you can use sprinkles as well if the occasion calls for it.

Use any left over chocolate to also an elevated kick to the decoration. Add it to a piping bag, cut a small hole in the bottom and swing your hand back and forth to create a pattern on top.

Equipment

  • Cookie Scoop
  • Parchment Paper
  • Cookie Sheets
  • Food Processor

Ingredients
  

  • 36 oreos
  • 8 oz cream cheese
  • 16 oz white chocolate chips, almond bark or candy coating

Instructions
 

  • Pulse Oreos in food processor until crumbled
  • Add cream cheese and pulse until well combined
  • Line a cookie sheet with parchment paper
  • Scoop mixture into rough balls on cookie sheet
  • Freeze for a minimum of 2 hours (i let mine freeze over night)

Melting Chocolate

  • Add candy coating to a glass measuring cup
  • Melt on high for one minute then stir.
  • Melt in 30 second incriments stirring each time
  • If the chocolate is too thick, add a little vegetable or melted coconut oil to thin it out
  • Dip each ball in the chocolate, shaking off the excess before placing onto parchment lined baking sheet.
  • Allow candy coating to harden at room tempretur.
  • Sprinkle with cookie crumbs or sprinkles or additional design with chocolate.

Notes

Store these in an Airtight container in the fridge for up to 5 days.
