Yummy Tummy granola

As a super busy mom and chef, I’m always looking for things my kids will eat and ways to save money!  Because seriously what mom doesn’t want to save money?  So one the things that I look for when planning out my meals is what can I make with ingredients in the house.  Insert granola! My son is heavily in the arts, like with a serious amount of training and he needs a ton of energy! 

Granola is one of those things that you can use in a myriad of ways.  On top of ice cream or yogurt, in baked desserts or by itself.  It’s one of the things you can make with your kids…..Seriously!  I first made granola when I was teaching kids cooking classes at my first gig out of culinary school back in 2012. At the time my kiddos were only 6 and 9 and absolutely loved this.

Preparation

For best results, move your oven rack to the middle of the oven.  This prevents uneven heating and burning on the top or bottom racks.  Preheat to 300 degrees

In a large bowl place oats, brown sugar, cinnamon, nutmeg, and salt and stir together.  This is where the kiddos can really get involved.  Teach them about using measuring spoons and cups during this process. 

For older kids, you can even discuss math by multiplying or dividing the recipe!

In a smaller bowl, add vegetable oil, honey and vanilla extract.   Stir to combine then pour the syrup mixture over the oat mixture and mix together.

You can have one of your little ones line a cookie sheet with foil and then place the granola mixture on the lined cookie sheet and spread into a thin layer.

Baking Process

Bake for 15 minutes. 

Remove from oven and toss mixture. Place back in the oven for another 5-10 minutes.  You’ll want to use your senses for this part.  You want the oats not only look lightly toasted but to smell toasted as well.

Cooling

Place the granola in a cool place and let it cool to room temperature for about 20 minutes (stirring occasionally).

Once the granola cools down feel free to add your favorite chopped nuts, dried fruit and leftover tasted cereal.

Store at room temperature. Granola will keep for up to two weeks.

Ingredients

  • 3 cups rolled oats
  • 2 tablespoons packed brown sugar
  • 1 teaspoon cinnamon
  • 1 pinch of ground nutmeg
  • 1/4 teaspoon kosher salt
  • 1/4 cup honey
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

1. Move your oven rack to the middle of the oven and preheat to 300 degrees

2. Place oats, brown sugar, cinnamon, nutmeg, and salt in a large bowl and stir together.

3. In a smaller bowl, add vegetable oil, honey and vanilla extract.

4. Stir to combine.

5. Pour the syrup mixture over the oat mixture and mix together.

6. Line a cookie sheet with foil.

7. Place the granola mixture on the lined cookie sheet and spread into a thin layer.

8.Bake for 15 minutes.

9. Remove from oven and toss mixture. Place back in the oven for another 5-10 minutes.

(You want the oats to smell and look lightly toasted)

11. Once the granola cools down feel free to spice things up and add your favorite chopped nuts, dried fruit and leftover tasted cereal.
